Lemon mini-cheesecakes on the pancakes

- Flour - 280 g
- Milk - 700 ml
- Chicken egg - 2 PCs

- Ricotta - 250 g
- Cream - 100 ml
- Sugar - 60 g
- Lemon - 1/2 PCs
- Pudding vanilla - 1 tbsp
- Lemon - 1 piece
- Sugar - 80 g
- Butter - 40 g
- Chicken egg - 1 piece
Step by step instruction of cooking Lemon mini-cheesecakes on the pancakes
Mix eggs, sugar, salt, flour and half of the rate of milk (to avoid lumps). Add rest of the milk, let the dough stand for half an hour. Stir in vegetable oil TM "generous gift" and make pancakes (not too thin).
For preparation of cakes I used silicone muffin cups with a top diameter of 7 cm, bottom - 4.5 cm with Glass of suitable size to cut circles from the pancakes. I laid out 4 circles on the cake, it took 6 crepes with a diameter of 20 cm.
Each slice dipped in sugar (lightly) and put in muffin tins on top of each other for 4-6 pieces (depending on thickness of pancakes).
Cookie cutters set on the grid or the baking tray.
For the filling, mix with a mixer or whisk the ricotta, cream and egg.
Add the lemon zest (to remove small grated only the yellow part), sugar and again stir the filling. Squeeze the juice of half lemon and dissolve in it a pudding. Add the mixture to the stuffing.
Again all thoroughly, but do not beat. The filling turns out as liquid sour cream.
Pour the filling on the pancake molds on top of the basics - almost to the top (while cooking it rises slightly). Bake mini city in the oven at 180 degrees for 20-25 minutes: the filling is still soft. Cakes are completely cooled, gently remove from the moulds and put in the cold.
Lemon Kurd (cream) is very easy to prepare in the microwave. Egg, sugar, juice and lemon zest, whisk to mix with softened butter. Put in the microwave for 1 minute, mix well. Repeat this 3 more times.
Thus, Kurd prepared in just 4 minutes. Ready thickened lemon curd to cool. This amount will be enough for the cakes, and pancake.
In the center of each mini cheese put half a teaspoon of lemon curd, decorate with strips of lemon peel. This is a very tasty and easy meal - I recommend! And you can cook with the stuffing and a large cheesecake with whole pancakes.
