This pleasant soup with a delicate texture contains large amounts of fiber, making it also quite satisfying.

- Wild rice - 30 g
- Zucchini - 200 g
- Onion - 1 piece
- Tomato - 200 g
- Potatoes - 200 g
- Broth - 0.5 l
- Cream - to taste
- Olive oil
- Salt - to taste
Step by step instruction of cooking Creamy soup with rice and zucchini
Rice (I used Wild Rice TM "Mistral") boil until tender, following instructions on the package.
Cooking time excluding time of rice.
Finely chop the onion and fry in olive oil (or vegetable oil).
Wash tomatoes, make on each cross-cut, put in boiling water for 15-20 seconds, then shift into cold water. With chilled tomatoes to remove the peel and cut into wedges, potatoes and zucchini – slices. Add the vegetables to the onions and fry all together for 10-15 minutes.
Vegetables put into the pot, pour hot vegetable broth, season with salt to taste and cook until the vegetables are tender (5-10 minutes).
Remove the soup from the heat, add the rice and beat with a blender.
Put the saucepan again on the fire, bring to a boil. The soup is ready!
Pour into soup cups, add the cream (optional), but without the cream soup is very tasty.
