This recipe has long been settled in our family, pancakes always turn out perfect: fragrant, thin and with crispy edges. Method of dough kneading from the book "Economics" 1958.

In a bowl break one egg of medium size. Add 1 tablespoon of sugar.
Add 0.5 teaspoon of salt.
Pour 1 Cup of cold milk.
Now all lightly whisk.
Add 1 Cup + 1/4 (a little less than half) cups of flour. (For orientation of the volume click on the picture).
Mix well with a whisk.
The dough should get in this step, thick, odnorodnye and without lumps.
Now it is a thick dough dilute the second glass of cold milk.
And knead well with a whisk. The consistency of the dough is enough liquid (the photo shows that the density is already there)
Add to the dough 0.5 teaspoon of baking soda (to extinguish is not necessary)
Next, add 2 tablespoons of vegetable oil (no smell) and mix well.
Here, the photo shows that went the reaction of baking soda, the dough was a little bubbling.
The dough is ready, you can proceed to baking.
But before you bake, you need to melt 70 g of butter (I put 1 minute in the microwave) to immediately after baking to grease our pancakes.
Bake pancakes on a dry pan (I have Teflon coated). Grease the pan does not need to, because do not forget that the dough we added 2 tbsp. of vegetable oil.
The dough is very obedient, does not stick, is not torn (if you gently turn over a knife) is perfect!
Even the first pancake is NOT lumpy ))

Well, today we have to plan meat filling. I almost always use JUST beef. Pancakes with such nachinkoy out very juicy and tasty. Not greasy.
We will need:
400 grams of boiled beef (cooking salt)
3 large onions (I have 4 medium pictured)
1 Cup broth (beef)
Meat grind in a meat grinder (medium lattice)
Fry the onion until light brown colour.
