Boxty - traditional Irish potato pancakes. One of the people that try to offer to tourists in Ireland. There are many variants of this dish. I prefer a recipe where the perfect balance of raw and cooked potatoes. They are prepared in the form of small fritters, and a single large cake, which is cut into several pieces and eat it like pizza. Can serve with sour cream or with various sauces. I suggest to boxty cheese mushroom pate, which prekrastno complement the taste of the potato pancake.

Two potatoes pour hot water and cook without salt. While cooking katiel, one can prepare the pate. Mushrooms clean, resem small pieces.
Pour into the pan a little "generous gift".
Fry the mushrooms, adding to them one or two slices of crumbled white fungus. Because the mushrooms I have a greenhouse, not a forest, so I "paint" them the taste of porcini mushrooms.
While fried mushrooms - cheese grate.
Add sour cream.
Warm two or three minutes.
Add cheese and warmed up to melt cheese.
Optional add freshly ground black pepper.
Let cool slightly and break the blender.
The sauce is ready.
Meanwhile, two potatoes cooked. Merge them with water and press with tolkushkoy.
The second two potatoes, three on a coarse grater.

I decided to cook one large pancake. Pour the dough into the pan. The thickness of the layer should be about 1.5 cm Fry boxty over very low heat. In my case, at least 15 minutes on each side. For small pancake may be enough for 5-7 minutes.
To flip to the other side I had to use a second pan. To shift our cake on the plate, I used the same technique.
