I already wrote about the fact that thanks to competition from "Oleyna", I second week experimenting with pancakes and fillings. Today is a cheese-Apple filling with caraway seeds. Pancakes turn out very spicy, and due to the fact that I baked under the egg sauce, also very tender, just melting in your mouth.

- Apple - 1 piece
- Lemon juice
- Cheese - 50 g
- Pancake - 5 PCs
- Yolk egg - 3 PCs
- Butter - 100 g
- Chicken egg - 1 piece
- Lemon juice - 1 tbsp

Grate cheese on a fine grater.
Apple RUB on a slice on a grater. Need very thin slices, so I used the grater, but you can use cistica for vegetables. Apples sprinkle with lemon juice. But since they are very finely chopped, then quickly darken, but the lemon still gives its flavor.
The half finished pancake to spread a bit of the apples, sprinkle with caraway seeds and cheese, wrap a triangle, and put in a baking dish. The whole procedure is repeated with the remaining pancakes.
The sauce was a very funny story. I watched recently on TV a program where the chef prepared a hollandaise sauce on a steam bath. Used 3 egg yolks, 250 gr. melted butter, a pinch of salt and the juice of a quarter lemon. He turned the consistency is very velvety sauce that he used for baking pancakes.
When I decided to do it again, it turned out very oily mass, which did not want to connect together. I was very upset, and my husband ran to the Internet and found several options hollandaise sauce 3 egg yolks and 100 gr. melted butter! Husband offered to take me even 3 egg yolks, whisking them in a water bath and gradually add the sauce. I followed his advice, but again mass is stratified. But I was not discouraged, and decided to experiment further. I took a whole egg and whipped it with a fork, and began to gradually add the egg, what was the sauce, continuing to whisk constantly with a fork. And lo and behold, turned out very beautiful and velvety sauce, which was interesting and tasty. Therefore, if you want to repeat the hollandaise sauce, use 3 egg yolks and 100 gr. of melted butter. And if suddenly it will not work, use my way.
Pancakes to top with sauce and put in a preheated 200 gr. The oven for 15 min.
