The highlight of this dish is definitely the peanut sauce. It is very rich, spicy and delicious. Perfectly complements the soft noodles and shrimp. Cooks very quickly and is not difficult.

One handful of peanuts grind in a mortar.
Add the garlic and ginger, squeezed through a press.
Add the soy sauce and vegetable oil.
Mix well everything in a mortar.
In a pan heat oil, fry the onion and carrots, cut into thin strips.
Add the peeled prawns and fry for 2-3 minutes, a little salt.
Boil noodles in salted water and add to the pan. Then put the spicy nut mix and mix well. Keep on heat for just a couple of minutes to connect all the elements.
Decompose the dish on plates and decorate with parsley leaves and whole peanuts.
