Couscous pour boiling water over 0.5 cm above the grains, add salt, mix well, cover and leave for 10 minutes to complete swelling. Vegetables wash, dry, carrots to be peeled. Slice thinly, I cut on a grater for carrots in Korean. In this embodiment, the cucumber is cut only the green part, the seeds have to be thrown away.
Mix soy sauce, rice vinegar and sesame oil. Season with marinade of diced vegetables. Leave to marinate for a couple of minutes, add the couscous, mix well, if necessary add salt and pepper, add Basil or parsley.
Serve as an appetizer, side dish or as a separate dish.
