Knead all ingredients for the dough.
Wrap the dough in plastic wrap and refrigerate for 1 hour.

remove from the oven.
remove the beans and the top sheet of parchment.
send in the oven for another 10 - 15 minutes until Crostata is ready. allow to cool Crostata.
Fill Crostata custard.
From the top, according to your taste, garnish with fruit. I used pineapple and papaya.
