Pearl barley is known since ancient times for its rich vitamin composition and healing properties, and fasting and sitting on a diet it will help saturate the body with necessary vitamins and microelements, as for me a wonderful alternative to meat.

While warming up the frying pan with olive oil, clean, wash, cut vegetables.
Fry the vegetables in a well heated frying pan for 5 minutes stirring occasionally.
Rinse barley, drain in a colander, and add to vegetables.
Pour water or broth, bring to a boil, reduce heat and simmer with the lid closed 40 minutes (should be languishing lazily gurgling). At the end of the time add salt and pepper, season with thyme, stir and turn off the stove and allow to stand, covered for 10 minutes.
P. S. you Can add with seasonings lemon zest or a little lemon juice will appear piquant acidity.
