Ingredients for Carrot lemon cake
- Carrots - 450 g
- Flour - 400 g
- Brown sugar - 305 g
- Lemon - 2 PCs
- Vegetable oil - 150 ml
- Pudding vanilla - 1 Pach.
- Almonds - 150 g
- Cinnamon - 1 tsp.
- Soda - 1 tsp.
- Water - 780 ml
Step by step instruction of cooking Carrot lemon cake
First make almond milk for the cream. Almonds can be cleaned, but you can not do this. I cleansed. Pour the peeled almonds in the bowl of a blender.
Pour a glass of cold water and carefully grind.
The resulting off-white emulsion, similar to milk. If almonds are not clean, the milk will turn a creamy color.
Pour contents of the blender bowl in the saucepan, pour 2 cups of water and put on fire. Bring to the boil and cook for 5 minutes, remove from heat, cover with a lid and stand for 10 minutes.
Pour into a pan of powder vanilla pudding, stirring constantly slowly pour in the almond milk, add 7 tbsp of sugar and put on a small fire. Cook while stirring until thick, before the first "gurgling".
Instead of the pudding powder you can take 40 g of starch or flour and the sachet of vanilla sugar.
Remove from heat and cover with a film so that the film lay on the surface of the pudding so it does not form a crust. Put them in the cold to cool.
Lemons cut into pieces, picking stones, and grind in blender to mush.
You can use raw lemons, but the lemons I previously had prevarila 15 minutes to remove possible strong bitterness and then cooled.
Lemon mass, divide into two equal parts: one - batter, one - in cream.
Take the paste. Carrot RUB on a small grater.
Mix in a bowl the grated carrots, sugar, vegetable oil, lemon
mass and 80 ml of water. This "raw" bowl.
In another bowl mix flour, soda and cinnamon. This "dry" bowl.
Combine bowls. Mix well. The dough is ready.
Coat the baking pan with parchment, grease it with vegetable oil, relative to evenly spread the dough.
Sent in a slightly heated oven and bake for 35 minutes at a temperature of 175 deg. - 180 deg.
Ready take out the cake, turn it upside down on the Board along with the paper, cover with a wet towel for 15 minutes, remove the towel and remove paper. Korzh let cool and then cut into 4 parts.
You can bake separately 3 or 4 Korzh.
In cold pudding add lemon mass and whisk until smooth. Each Korzh liberally lubricated cream, put them in the cold for impregnation at night.
While the cake soaked, will make a wonderful candy made from almond meal. In a saucepan over cake pour a jar of sweet condensed milk and add 50 grams of butter, put on a small fire and ovarium at a constant (!) stirring to a thick cream of wheat and cream colors. Cool the mixture and roll small balls, dip them in coconut or cocoa.
We decorate our vegetable cake and served to the table.
