Ingredients for Soup with beetroot and pearl barley
- Chicken breast - 1/2 PCs
- Pearl barley - 100 g
- Beets - 500 g
- Lemon juice - 1/2 PCs
- Mushrooms - 150 g
- Onion - 1 piece
- Carrots - 1 piece
- Pepper - 1/2 PCs
- Tomato paste - 1 tsp.
- Green onions
- Garlic - 3 tooth.
Step by step instruction of cooking Soup with beetroot and pearl barley
Beets peel, grate on a grater (a food processor) and sent to the pan on a medium heat. Add the juice of half a lemon. Simmer for an hour, if needed add some water.
Put on to cook in the broth. In parallel, boil the pearl barley (I took the bag easier and cooks faster), you can add it immediately into the boiling broth and cook together with the chicken.
Onions and carrots fry until almost cooked, add bell pepper, in a few minutes...
Add the tomato, simmer for another 5 minutes.
Extracted from the broth the chicken, separate the meat and return the meat back. Add pearl barley (if you cooked it separately), zazharku.
Also put in a pan of chopped green onions, mushrooms, beets and chopped garlic, leave to stew for 10 minutes.
