White beans soak in cold water for at least 4 hours. Then drain the water, pour fresh and cook 1 hour on low heat.
Potatoes well washed with a brush, wrap each in foil and bake at 200 degrees for 25 minutes. Then each potato if desired, peel and cut into 6-8 lengthwise slices. You can sear the slices in the oven for 5-7 minutes while convection at 200 degrees.
To prepare onions, young garlic and celery stalks.
Onion cut into thin feathers, garlic cloves halved, celery, thinly slice across the grain. Fry in vegetable oil for 10 minutes, stirring.
Add the paprika and chopped tomatoes in own juice, stir, reduce heat and simmer under the lid closed for 5-7 minutes.
Then add boiled white beans, after 5 minutes the potato wedges, mix gently and simmer for another 10-15 minutes. Remove from heat, season to taste with salt and pepper and serve sprinkled with fresh herbs and young garlic.
