Ingredients for Cherry mini cakes in shells
- Yogurt - 120 g
- Water - 120 g
- Yeast - 7 g
- Flour - 470 g
- Chicken egg - 2 PCs
- Sugar - 100 g
- Vanilla sugar
- Salt - 1 tsp.
- Butter - 70 g
- Leavening agent - 1 tsp.
- Cherry - 150 g
- Cinnamon - 1/2 tsp.
- Cognac - 4 tbsp
- Powdered sugar - 200 g
- Juice - 3 tbsp.
- Topping pastry
Step by step instruction of cooking Cherry mini cakes in shells
Frozen cherries will defrost in a sieve, juice save. Dried cherries fill a brandy.
For the dough: heat up the yogurt, mix it with warm water, add a tablespoon of sugar and yeast. All mix up, cover and leave in a warm place until the appearance of the foam cap (20-30 minutes). In a separate bowl mix the flour, cinnamon, sugar, salt, baking powder, vanilla sugar. Make a well and pour the yeast mixture and two eggs, slightly beaten.
Mix the viscous, sticky dough. Add soft butter, thawed cherry juice and dried cherries, pressed from cognac. Juice and the cognac, mix and save for glaze.
The dough again knead. It turns out pink, very fragrant. The consistency is almost fluid, it falls off a spoon. I love the batter for cakes. Baking is airy, almost weightless! The dishes with the dough, cover and leave in a warm place for 1 hour for fermentation.
The shells I collected and prepared in advance. Smashed the egg the usual way, and gently "down" the top (sharp) part of the shell. Next, a shell washed by removing the inner plenochku. The film is well separated, it is enough to just RUB the shell on the inside with your finger. Dry, before baking greased the inner part of the shells with vegetable oil.
For the stability of shells, poured into molds rice, make a hole and put in the hole of the shell. Gently, with a teaspoon fill the makeshift molds the dough to 1/2 volume, cover and leave for 30 minutes to rise. Preheat the oven t 180-190 degrees.
Bake cakes for 20-25 minutes or until Browning. See how the dough looks adorable peeking out of the shells! Give the mud pies to cool completely and decorate with icing.
For the icing ingredient amounts I stated are approximate. In the powder little by little add the juice mixed with the brandy and stir the mixture, until desired thickness of glaze.
