In anticipation of the next squash season, I want to offer you a simple and interesting recipe of pancakes from zucchini (zucchini), with the addition of meat, served on a pillow of salad with tomatoes, sour. A real summer recipe for hot days or a quick dinner.

- Minced meat - 250 g

- Bow white - 1 piece
- Olive oil - 5 tbsp
- Vinegar - 5 tbsp

Step by step instruction of cooking Pumpkin pancakes with minced meat tomato salad

Grate the peeled zucchini (without seeds) or zucchini on a coarse grater

While frying the pancakes to cook the salad: cut into slices or half-rings, tomatoes, thinly slice the onion half rings (I used 2 large green onions, with small white heads)

To prepare dressing: shake well in the jar (beat with a fork) olive oil with balsamic vinegar, salt and pepper.
Alternative: vegetable oil, lemon juice, salt and pepper
