And fold again in three layers and put in refrigerator for 30 minutes.

Meanwhile, prepare the filling. Put in a saucepan sugar, honey and water and bring to a boil.

Grind the almonds into flour in a food processor.

Add cooked syrup and mix well.
Hinder takes a long time to get a paste consistency.
If necessary, add maple (or any other) syrup.

Then add the powdered sugar, protein, butter, and cinnamon and stir. Put in the fridge to cool.

Take out of the refrigerator the cooled dough and roll out to a rectangle about 40 x 45 cm

Also at this stage you can cover with film and put in the fridge if you are going to bake the next day.
On the day of cooking remove from refrigerator and put in a warm place for 30-40 minutes.

Bake in preheated to 200 C (400F) oven for 5-15 minutes (depending on size of puffs)
