Piper is pepper Bulgarian, hence the name of the dish "piperita". However, the word "piperki" has a circulation in a fairly small region of Bulgaria - Varna and its surrounding area, whereas in other parts of the country pepper is more commonly known as "pig" (accent on the first syllable). Accordingly, the dish is more often called a "pig liver with adeno Kiselev mlyako" ("baked pepper with the strained sour milk"). With thanks to Alex Barbour for the recipe.
