Ingredients for Caviar of eggplant
- Eggplant - 1.5 kg
- Onion - 1 piece
- Pepper - 2 PCs
- Garlic - 1 tsp.
- Tomato paste - 2 tsp.
- Sugar - 1 tsp.
- Salt

Step by step instruction of cooking Caviar of eggplant

Boil the eggplant with the addition of 1 tbsp of salt until soft, even a bit to digest. Spread on a Board, leave to cool.

Onion, pepper cut into small cubes

Fry in vegetable oil on low heat until soft, approximately 20-25 min., stirring occasionally.

The cooled aubergine

Finely chopped with a knife

Put in sauce pan, mix well, fire a little more

After about 10 min. add salt (1/2 tbsp), garlic (if you take heart, it need a small slice).
Add the spices (I have black and white pepper, Basil, oregano). If you like more spicy - add 1/4h.l. curry.
Stir.

Add tomato paste, stir.
Then the sugar and stir.

After 2-3 minutes turn off the heat - the eggs are ready!
