Ingredients for Roll from the shank with a red sauce
- Knuckle - 1 kg
- Chicken fillet - 200 g
- Carrots - 1 piece
- The Apium graveolens Dulce - 1 piece
- Bay leaf - 3 PCs
- Dark beer - 250 ml
- Mustard seeds - 1 tsp.
- Soy sauce - 3 tbsp.
- Honey - 2 tbsp
- Ginger - 1 tsp.
- Garlic - 5 a tooth.
- Adjika - 1 tsp.
- Mint - 1 tbsp
- Mushrooms - 1 Cup.
- Puree vegetables - 2 tbsp
- Butter - 1 tbsp
- Vegetable oil - 1 tbsp
- Onion - 1 piece
- Cream - 200 ml
- Salt - to taste
- Soy sauce - 1 tbsp
Step by step instruction of cooking Roll from the shank with a red sauce

Combine all the ingredients for the marinade.
Punch in a blender.

Generously coat with marinade knuckle and fillet pieces.

Because I have, as I wrote above, was a short shank, I put it on several layers of foil very tightly spun, tightly pressed on the sides.

If the knuckle allows to spin into a roll, tied with string, wrapped in several layers of foil.
To clean in a cold place for 4 hours - I lay night.

Put the knuckle in a pot, pour water to cover the shanks, add the peeled carrots and onions, petiolate celery and put on fire.
Bring to a boil and cook for 35 minutes.
Strain the broth.

Lay the knuckle - foil is not removed!- in a baking dish and pour beer from 1 liter of broth, add the Bay leaves and immediately put in a preheated 175 oven.
Simmer for 2.5 hours, if the liquid boils away, then add the remaining broth.
Remove the knuckle and put in a cold place for 10 hours.

Add mushrooms, sweet soy sauce, salt.

Spread the pumpkin puree, stir, let it sit a minute, add cream, evaporated to the desired density and to adjust the sauce to your liking.
