The carrot cupcakes, but I have not found. Tried this recipe for many years. This is my dessert favorite.

Scrape the carrots. To prepare the walnuts.
Carrots grate on a fine grater. Nuts chop with a knife (I have Estella in a mortar).
In a bowl combine all the ingredients. Mix well. Pour the batter into the baking dish (although I have silicone, I have greased with vegetable oil).
Bake at 180 degrees for 40-45 minutes.
If desired, sprinkle with powdered sugar.
