Pancakes with pumpkin and dried apricots

A lot of recipes for pancake day posted recently are wonderful cooks! I'll take my chances and I offer you my version of wheat-rye pancakes with pumpkin, dried apricots, honey and cinnamon! Fragrant, fluffy and delicious!
Ingredients for Pancakes with pumpkin and dried apricots
- Flour - 3 tbsp.
- Rye flour - 3 tbsp.
- Yogurt - 1 Cup.
- Chicken egg - 3 PCs
- Dried apricots - 150 g
- Pumpkin - 250 g
- Honey - 3 tbsp.
- Brown sugar - 2 tbsp
- Cinnamon - 1 tsp.
- Butter - 2 tbsp
- Leavening agent - 1 tsp.
- Salt - 1 depot.
- Vegetable oil
Step by step instruction of cooking Pancakes with pumpkin and dried apricots
Pumpkin and dried apricots cut into small cubes, mix with cinnamon and honey, simmer in butter "milieu" until soft pumpkin (7-8 minutes). Cool.
Beat eggs with yogurt.
In the mixture enter the sifted with the baking powder and the flour (2 kinds), sugar, salt, knead the dough thin.
Pumpkin with dried apricots to add to the batter, mix well.
Pan grease with vegetable oil, heat well. Bake pancakes with 2 sides until Golden brown.
