Mix whole wheat flour, lukewarm water and yeast. Ideally you need 1 gram of yeast, but not all kitchen scales show a small weight. Flax seeds, pour 50 ml of water (warm), cover with foil and leave overnight.
The sourdough for the morning.
Mix three kinds of flour (sift), sourdough, salt, honey, yeast (3 g), flax seeds (water during the night to fully absorb) and water at room temperature. Knead the dough. All the ingredients I mixed with a mixer, and then kneaded the dough by hand on a work surface, sprinkle a small amount of flour. The dough will be quite thick, but not very tight.
Put the dough in a bowl, greased with vegetable oil, tighten with cling film and put to approach in a warm place for 60 minutes. ( I put it in the oven when the mode LIGHT)
