A simple recipe for meatless meals of rice and pumpkin.

Wash rice in cold water and soak for 15 minutes
Then drain in a sieve and let the water drain out.
Pumpkin, hot pepper peel and cut into cubes.
Preheat a pan on medium heat with vegetable oil and put cumin seeds, cinnamon, sliced pepper and dried Fig.
After 3-4 minutes add the chopped pumpkin and stir. Then add boiling water, salt and mix again. Cover, reduce heat, simmer until the rice has absorbed all the water. At the end of cooking pour the rice with lemon juice.
Each serving, season with lemon slice and a sprig of parsley.
