I cook chickpeas in advance and immediately pounds. The remains are distributed in bags and freeze, when you have nut always at hand.
Eggplant chopped coarsely, add salt, let stand for 15 min. Then rinse and squeeze.
Fry until Golden brown.
Dressing:squeeze the garlic, add salt, add the paprika and lemon juice.
Mix the chickpea and the eggplant, chop and add the parsley.
Pour the dressing and allow to infuse for a couple of hours.
