The author of the recipe used almond flakes. I replaced them with whole almonds. Just shredded it in a blender, until the consistency of flour, and such pieces as in the photo.
Prepare praline. Two different types of sugar sent to the pan, shaking it periodically, melt the sugar until the caramel will not become brown.
Add chopped almonds, using a wooden spoon to mix and heat the entire mixture.
On baking paper, evenly spread the caramel and allow it to cool down. Then grind them.
Proteins, beat with a mixer in a magnificent foam, add the powdered sugar and whisk in a solid foam.
Also whisk and cream. Then combine the beaten egg whites and cream, on low speed, knead until the unification into a homogeneous mass.
Chop the prunes and add to creamy mass and mix.
Praline grind, I did it in a mortar. A little praline to set them aside for topping, and the rest add to creamy mass and mix.
The form in which we freeze the nougat, covered with foil or baking paper. Fill the form with chocolate, sprinkle with praline and send in the freezer for 4 hours (the night).
Get the nougat, cut into portions, serve and enjoy the taste.
