Step 1

Make Spinach "cake": first, preheat the oven to 180 degrees. 
The form I took with a diameter of 26 cm, with a removable bottom, line the bottom baking paper and grease with sunflower oil. 
Begin to prepare the dough: take fresh spinach, sunflower oil, the zest and juice of one lemon, put into blender. Whisk all until smooth. Lemon here, otherwise the spinach will darken. 
Take 2 eggs and 200 gr of sugar and whisk until fluffy state. 
In this mass add spinach a lot and beat at low speed with a mixer. 
Separately mix the flour with 2 teaspoons of baking powder and sift 2 times. Then add the flour little by little in the spinach mass and mix from the bottom up shovel, most importantly, not much to interfere with that the dough retained its airiness. 
The dough is ready. 
Pour the batter into the pan and bake for about 40 minutes (this is watching on your oven) 
Tip: do not open the oven before 30 minutes. 
Spinach when the cake is ready, remove it from the form and cool on a lattice, it is obligatory, otherwise the dough will stick to the surface.

In the protein mass, whisking constantly with a mixer, introduce the syrup, a few drops of lemon - whisk to the state peaks.At the last stage make the Protein custard: whisk 3 protein to a fluffy mass.
Separately pour 140 grams of sugar 50 grams of water and heated over medium heat, stirring constantly, until dissolved. Bring to a boil.
In the protein mass, whisking constantly with a mixer, introduce the syrup, a few drops of lemon - whisk to the state peaks.


Step 5

Each layer I was soaked with a impregnation (lemon juice +water+ sugar), but it proved unnecessary, spinach cakes themselves are moist. 

Collect the cake :

Leave the cake to soak overnight.
