Indian pickles-the kind of tapas that is served to hot. Vegetables marinated with spices and herbs and become incredibly delicious. And a pungent and spicy!
Ingredients for Indian vegetable pickles
- Carrots - 1 Cup.
- Vegetable oil - 4 tbsp
- Ginger - 2 tsp.
- Garlic - 4 the tooth.
- Turmeric - 1/4 tsp
- Powder mustard - 2 tsp.
- Lemon juice - 1.5 tbsp
- Peppers red hot chilli - 1/2 tsp.
- Zira - 1/2 tsp.
Step by step instruction of cooking Indian vegetable pickles
These pickles can be made from any vegetables-carrots, cabbage, bell peppers, cauliflower or a mix of different vegetables. It all depends on Your personal preference and taste. I usually do carrots or cabbage.
So, choose a vegetable, in this case carrots, cut into small cubes.
In a saucepan or small frying pan, pour oil and heat.
In the heated oil put the carrots, grated ginger, chopped garlic and stir a couple of times, holding the fire.
Remove the pan from the heat and add the dry spices-chilli, turmeric, mustard powder, cumin. Mix thoroughly and let cool slightly.
Warm the carrots add lemon juice and stir. Give the mixture to stand for 12 hours at room temperature, then arrange in jars and refrigerate.
Very tasty pickles will be in 2-3 days.
Pickles are ready! Stored in a glass or ceramic bowl in the refrigerator for up to 1 month, if there will not be water, so get the pickle with a dry spoon. Slowly pickle will become dry land, if necessary, add oil.
