Eggplant with mint is a very common culinary combination. I added the chickpeas and rice TM "Mistral" as a side dish and got a delicious and hearty dinner.

Rice bags, HM "Mistral" cook in boiling salted water according to the instructions on the package. Figure "amber" cooked 35 minutes.
Cut eggplant into small cubes, fry in vegetable oil on low heat for 10 minutes, stirring occasionally.
Of chickpeas drain the chickpeas pour in the eggplant. Season with salt and pepper, cook 5 minutes.
Mint finely chop onions, add to eggplant and chickpeas. Fry for another 3-4 minutes.
On a plate spread the cooked rice on top of eggplant with mint.
