One stalk of celery chopped coarsely, put in a pot ( volume 3 l ), there also add peeled onion, thyme and Bay leaf, tied with string. Cover with cold water, add the lentils, bring to a boil and cook until the lentils are tender.
While cooking the lentils, pepper cut in large cubes and fry in a griddle pan with a small amount of vegetable oil.
The lentils are ready drain in a colander to remove the vegetables, place in a bowl and season with a little salt, fill with oil, cover with a lid.
To connect lentils, pepper with the remaining finely chopped celery and parsley, stir, season to taste with salt and pepper, drizzle with vinegar.
