BASE:grind the Biscuits, add melted butter and milk (cream). Mix well. Spread evenly on a form ( I have a split ring) and compacted. Put into the refrigerator while we prepare the mousse.
Soak gelatine in 100 ml water and leave to swell.
Cream whisk until stable peak.
ONLY chilled whipped cream! The bowl and the beaters is also preferably pre-cooled.
Cream cheese, powdered sugar, vanilla sugar and a pinch of salt beat until smooth.
Melt chocolate, cool slightly and add to the curd cheese. Mix well.
Melt the gelatine and strain (do NOT boil!) and add to the cheese-chocolate mixture. Mix everything carefully.
To mass add the cream, gently to combine everything and put into the form.
The form put into the refrigerator until fully cured. I was cleaning for the night.
Before serving, with knife, careful to hold the sides and remove the form.
