Very tasty and easy to prepare salad, stomachs can be replaced by fillet of duck, but I'll offer my version of the salad, as duck gizzard dearly love! On top of the salad light and healthy!
Ingredients for Salad with duck gizzards and asparagus
- Stomach - 5 PCs
- Asparagus - 1 Gorst.
- Spinach - 1 Gorst.
- Onion - 0,5 PCs
- Cherry tomatoes - 1 Gorst.
- Green olives - to taste
- Lime - 1/4 PCs
- Pine nuts - to taste
- Soy sauce - 1 tsp.
- Olive oil - 1 tsp.
- Allspice - to taste
- Bay leaf - to taste
- Salt - to taste
Step by step instruction of cooking Salad with duck gizzards and asparagus
First, boil gizzards until tender in slightly salted water with the addition of Laurel, allspice. Stomachs are ready remove with a slotted spoon, cool;
Asparagus cut in half and boil in the broth from the gizzards literally 2-3 minutes;
On a plate put spinach;
Onion, thinly sliced, and asparagus;
Add cherry and stomachs cut in half.
Add the olives, slices of lime and sprinkle with pepper to taste;
For dressing mix the soy sauce and oil;
Before use, pour salad dressing and sprinkle with nuts to your taste;
