Very tasty, rich in variety of flavors, I would say, autumn pie-cheesecake! A thin rim of unsalted dough and cottage cheese filling with pumpkin, raisins, nuts and citrus scents!
Ingredients for Pumpkin cheesecake
- Flour - 220 g
- Salt - 1 depot.
- Butter - 150 g
- Yolk egg - 1 piece
- Water - 4 tbsp
- Chicken egg - 2 PCs
- Sugar - 160 g
- Vanilla sugar - 1.5 tsp.
- Pumpkin - 200 g
- Curd - 350 g
- Lemon juice - 1 tsp.
- Orange zest - 1 tbsp
- Corn starch - 4 tbsp
- Raisins - 120 g
- Walnuts - 120 g
Step by step instruction of cooking Pumpkin cheesecake

For the dough:
in a bowl, mix the flour and salt, add the pieces of cold butter and mash with your hands into crumbs.

Add the yolk, add ice water, quickly kneading the dough, collecting it into a ball.

Lightly knead the dough until smooth.

Wrap in plastic wrap and refrigerate for 30 minutes.

For cottage cheese filling:
eggs, sugar and vanilla sugar, whisk.

Add corn starch and mix thoroughly.

Rinse the raisins and Pat dry with paper towel, if necessary, removing the stems. Nuts ignited in the pan for 3-4 minutes, stirring occasionally, then chop.
Add the raisins and nuts in curd-pumpkin mass. Mix well.

Chilled dough roll into a circle the size of the bottom of the form for baking (diameter 20 cm), carefully transfer it to a form that can form ledges of 3.5-4 cm (I did it by hand). Prick the dough allover with a fork and send in to bake in a preheated 180 degree oven for 5-7 minutes.

Then remove from the oven, put the cheese-pumpkin filling, gently flatten the top.
Again put the pie into the oven at 200 degrees for 25-30 minutes.
The finished cake remove from the oven, allow to cool completely.
