In fact, this is one of the recipes for risotto, but since I have not found the Arborio rice, I did not dare to call Risotto). And since everything else was already prepared, I decided to cook ordinary rice, it turned out still tasty. The dish is cooked quickly, without any problems. "Risotto" I will cook with vegetable broth.

For the broth took the vegetables that were in the house: 1 onion, 1 carrot, two halves of frozen peppers, a clove of garlic, sprig of parsley and 1 potato (no, it was my desire)

In a pot of boiling water, lay the sauteed vegetables, potatoes, peppers, parsley and cook for 20-25 minutes. If there is celery - you can also in the broth. I cook the broth in advance, so a little steep. Then you can strain the broth, at your discretion. I do not strain, the ladle gently grasp only the liquid.

In a wide saucepan in olive oil fry finely chopped onion ( preferably purple), a clove of garlic. Stirring continuously, heat must be large. Remove the garlic as the onions fry until transparent.

Broth to pour one or two ladle - like liquid is evaporated - top up a little bit. And so until soft rice. Once the rice has become softer (do not squeak on the teeth), and the liquid has evaporated - pour 100-120 ml of white wine, increase the fire and to actively interfere.

The wine has evaporated and then the next step is to put the shrimp, stir, pour a little broth and reduce heat. Season with salt to taste. Add your favorite herbs. Traditionally thyme. But there are no restrictions - you can experiment with.

Continue to cook the rice, gradually add broth, stirring constantly. The broth should not be a lot to add one or two ladle, but not allowed to fully evaporate the liquid. The consistency should remain mushy. 5 minutes before cooked add a knob of butter.
Turn off the heat, cover and let stand 7-10 minutes.

Rice with shrimp is ready! Sprinkle with parsley as desired. A sprinkle of cheese, but, in my opinion, is superfluous.
If you take rice for risotto - Arborio, Carnaroli or Vialone - it is definitely possible to call this dish a Risotto!)
