Prepare the products.
From estuary press out the juice.
Boil the rice as indicated on package. 1/3 passion fruit juice mixed with lemon juice. Bring to a boil over medium heat, dissolve the sugar, stirring constantly over medium heat.
Starch mixed with 3 tbsp of passion fruit juice added to the pan. Again bring to a boil, mix with the remaining juice. Cooled.
Mango peeled, the flesh separated from the bones. Slice them into segments. Mix with boiled rice.
Spread rice with mango in the plate. pour the fruit soup.
Served to the table.
