Aromatic rice with mushrooms and nettles

Very tasty rice for a side dish or as a standalone course. The recipe is known in Greek boss (Italian-Greek) Hector Botrini, restaurants (Athens and Corfu) is considered one of the best in Greece.

Wash the mushrooms and slice. It is better to use wild mushrooms.

Nettles soak in boiling water for a few minutes and slice.

In a saucepan heat the oil, put the mushrooms, nettles and rice. Sauté for 5 minutes.

Gradually pour the broth, stirring occasionally. Cook on medium heat until the rice is tender. Add zest, salt and pepper.

In a small saucepan, or deep skillet, heat olive oil, sauté chopped onion and garlic, add the olives, sliced tomato, parsley and Basil, grape syrup, salt and pepper the entire mixture to boil slightly and then add tomato juice.

Boil until the vegetables are soft. Check for salt and pepper. At high pH, add some more syrup or sugar.

The sauce is ready to break the blender.
