Cake and cream and egg yolks

The recipe for this cake I found Zhanna Tikhonova. However, whether the products we are so different, or something else, but I did it a little differently and in their own way. But! The cake was so tender and moist, the cakes remained the same soft, as if freshly baked, we loved them the first time. Now I am going to bake.

50 g of yeast diluted in 350 ml of warm cream and leave for 10 minutes.

The recipe was as follows: 600 g of sifted flour pour the cream with yeast and knead the dough.
I got too steep and lumpy.

The flour was added gradually, it took me less 0.5 Cup than the recipe.

Add 400 g melted cooled butter ( I have a Belarusian, to 82.5%).
Again beat well.

Add the yeast mixture to the egg - oil mixture.
Well fingers knead, stretching the dough into one dough.
First enter presennol 300 g of flour.
Then add the dried fruit:
150 g of raisins and optional other dried fruit ( I had dried apricots) which I filled with boiling water for 5 minutes, then threw in a sieve to drain liquid.
Dry and mix with 1 tbsp of starch.

At this stage it was necessary to add 400 ml of warm cream, but I forgot about them and quite successfully.
It was written to add 300 g of flour, and then the author wrote that it was not enough and she added another 400 g of flour.
I also had to add 700 g of flour.

The dough I shifted on the tray, which was covered with cling film and put in the oven, which warmed up to 50 degrees, as the house was cool.
For proofing for 2 hours.

The dough is soft.
I put it in paper moulds ( I got 11 medium and 2 small cupcakes).
The approach in a warm place for 0.5-1 hour.

Bake in a preheated oven at 160 degrees until dry wooden skewers and Golden brown.

The cakes turned out very tender, moist and soft even on the 4th day.
