Prepare products for berry puree.

In a saucepan add the berries. (I used frozen, pre-thaw them.) To fresh berries you need to add 2 tbsp of water.

Wipe berries through a sieve.

Pour berry puree into a wide heavy-bottomed pan. It turns out 450 grams of berry puree.

In the pot to puree add quittin TM "HAAS". Stir. Put the saucepan on the fire.

In berry mass add 500 grams of sugar and 2 tablespoons of lemon juice.

Berry puree - jam cools. For this I put the pan in a bowl of ice water. The berry puree was turned into thick, fragrant and delicious jam.

Now start preparing the marshmallows. For marshmallows I will need 250 grams berry puree - jam (the rest of the sauce put in a jar and store in the fridge for the next batch of marshmallow))).
In the mixer bowl put 250g of the berry puree and 1 egg white.

In a small saucepan, put 220 grams of sugar, 7 grams of agar and pour water. Put the saucepan on the fire.
