Eggplant wash, remove the tails, cut into slices and salt. Leave for 10 mins, squeeze out the liberated juice.

In skillet, heat vegetable oil, fry the eggplant until Golden brown, then lay them on a paper towel to remove excess oil.

Onions and garlic peel, chop and fry in the same pan for 5 minutes, If necessary add 1-2 tbsp vegetable oil

Put in pan, mince, cook, stirring, for another 5-8 minutes. Pour in wine, add salt and pepper to taste, simmer for about 10 min.

Tomatoes wash and cut into slices.

Sauce: in a saucepan, melt the butter, add the flour gradually, stirring to avoid lumps, pour in the milk. Cook over medium heat, stirring constantly, until it thickens. Add the nutmeg.
Beat eggs. The saucepan with the sauce remove from the heat and, stirring constantly, introduce the beaten eggs.

In a baking dish put layers: eggplant, half the grated cheese, minced onion and garlic. The last layer place the tomatoes, pour moussaka sauce and sprinkle with remaining cheese.
Bake in the preheated oven to 180 degrees for 40-50 mins (depending on oven).
