Pie "French Tian"

This is my interpretation of pie, the recipe of which is shown in the transmission "Masterchef Ukraine". It turns out very tasty and satisfying dish of tender chicken mousse, creamy ricotta with spinach and spicy zucchini.

Step by step instruction of cooking Pie "French Tian"

First preparing the salt dough. Oil cooling in the freezer for about 15 minutes, chop (chop with a knife or grate) mix flour, salt and egg yolks (the whites will go into the mousse). Knead the dough and put into the refrigerator for 30 minutes.

Zucchini cut lengthwise into thin slices (thickness about 2-3 mm). You can use a knife, vegetable peeler, just push harder. I used a slicer (slicer). Next, add in the sliced zucchini with olive oil, salt, pepper and dried Basil (salt and pepper take 1 tsp.), mix gently not to break the slices of zucchini. Leave to marinate for at least 30 minutes.

Next, prepare the ricotta with the spinach. Spinach I chopped pressed in small kegs, for every 250 grams. the ricotta I took 2 barrel spinach (only need to defrost).
In the bowl for grinding blender mix ricotta, spinach and salt (to taste)

Chicken mousse. Chicken 2 times grind in a meat grinder (to accurately grind all the cartilage and bone). In a bowl put the minced meat, add spices (and salt, if desired black pepper), cream, mix well. In the bowl of a blender, beat egg whites to peaks and gently stir whites into the stuffing.

Onion, bell pepper and tomatoes cut into cubes of medium size, add spices and stew.

Form for baking grease with oil and spread the cake layers:
2/3 of the dough to flatten and pierce with a fork to avoid puffing.
Top evenly spread the ricotta with the spinach, then put half of the marinated zucchini.

For courgettes gently lay chicken mousse, not to tread ricotta. On top of the mousse to put the second half of zucchini, top with a layer of stewed vegetables.
The last layer is the crumb from the remaining pastry.

Bake the Tian in a preheated 180 degree oven for 30 minutes on average.
