Very nice tart - soft dough, sweet pie with cheese and slices of fruit. Cooked very simply and quickly.

To prepare the cheese.
In a sterilized container for making curd pour the pasteurized milk at room temperature.
Pour into it the yeast to cream cheese, mix well with a clean dry spoon to dissolve yeast. Close the container with a lid and put in yogurt maker-thermos 6-10 hours.
After fermentation the mass is cut with a knife lengthwise and crosswise, drawing "bars". Then the mass is heated to 50-60° in a water bath and cook the curd for 10-15 minutes.
To discard a mass on a sieve, covered with gauze in 2-3 layers.

The cheese turns out tender and delicious.
If you need a more dry and dense cheese, you need to put it under a press for a few hours.

To prepare the dough Pâte Sucrée.
In the bowl of a food processor mix the flour, salt and sugar.

Add cold butter, cut into pieces.

Grind to a state of crumbs.

Add water, grind until it begins to form a ball of dough.
If the ball is not formed, add another 1-2 tbsp of water.

As you can see, I prepare the dough in the grinder, so I have at the end of cooking just knead it by hand. It is soft and pliable.

Put the dough in the tart form and put into the refrigerator.

Apple and peach (I had peaches) cut into thin (but not too) slices.
To place them in a bowl, add sugar and let stand.

Beat the cheese with sugar. The amount of sugar depends on how sour the curd is.
You can optionally add the vanilla extract.

Preheat the oven to 180°C.
Remove the form with the dough from the refrigerator.
Spread over the dough cheese filling.

On top of the cheese spread, alternating, overlapping slices of Apple and peach/nectarine.
Bake for 40-50 minutes.
