Very tasty and flavorful, the pate spread. Very good with toast or just on a piece of bread, or simply with pita bread and red wine.
Ingredients for Riet of vegetables and smoked chicken
- Eggplant - 500 g
- Chicken thigh - 500 g
- Onion - 2 PCs
- Garlic - 1 piece
- Salt - to taste
- Black pepper - to taste
- Vinegar - 2 tbsp
Step by step instruction of cooking Riet of vegetables and smoked chicken
Prick the eggplant with a knife. Onion cut in half.
Bake vegetables at temp.200 deg for 45 minutes.
Garlic to get after 20 minutes of roasting.
Clean the eggplant from the skin and onions from the husk, squeeze the garlic.
Add the vegetables to the minced meat and chop.
Add salt to taste and pepper.
Vinegar is added to taste, I like sour, so I add it, but can do without it

Keep it in a jar in the refrigerator for about 2-3 days.
