Vegetable soup "Almost minestrone"

Step by step instruction of cooking Vegetable soup "Almost minestrone"
As you know that minestrone is made from any seasonal vegetables. I will be preparing my vegetable soup that I had in the kitchen. Cut vegetables in small cubes. Leave the garlic cloves. The green beans I had frozen and I thawed. With green peas drained the liquid and washed it in the colander.
We need a pot with a thick bottom. We first saute the vegetables in it until tender, then fill with boiling water. I have a pan-pot. Poured 1 tbsp of olive oil and put the garlic cloves, cut lengthwise into two parts. Fry the garlic for a minute in oil and remove it. What we need is to give their flavor to the oil.
Arrange the onion and then, after 1 minute, the carrots. Cook until soft and the oil from the carrot stained. I do under cover and on low heat. Don't fry them.
Then put the vegetables, which are cooked very quickly: bell peppers, celery and tomato. Stew under a lid until tender.
Green beans thawed and it should be prepared three minutes. Send them to the vegetables in the pan under the lid.

Fill the parsley, add another tablespoon of olive oil and remove the pan from the heat. We don't need the parsley is cooked.
Give the soup a little brew under the lid.
