Ingredients for Biscuits "Cantucci" with Sabayon
- Flour - 350 g
- Baking powder (baking powder) - 10 g
- Salt - 1.25 g
- Chicken egg - 3 PCs
- Sugar - 250 g
- Dessert wine - 80 ml
- Almonds - 200 g
- Yolk egg - 4 PCs

Preparation of biscuits:
Separately sift the flour, add the salt and baking powder. In another bowl the eggs, add sugar and wine and whisk.

Dry ingredients mix in the egg mixture, stir and add the almonds. Knead the dough by hand, divide into two equal parts and spread castellany baking paper baking sheet. Bake for 30 mins 180C. Pull out, cut into pieces and dry for another 5 mins 180C.

In a deep bowl mix the yolks, sugar and wine, stir and put heat on a steam bath (on medium heat), stirring constantly (preferably with a mixer), bring the mixture to a thick, creamy mass which should keep good form.
