- Eggplant - 2 PCs
- Minced meat - 250 g
- Onion - 1 piece
- Garlic - 1 tooth.
- Salt
- Black pepper
- Peppers red hot chilli
- Tomato paste - 2 tbsp
- Water - 250 ml
- Vegetable oil - 1 tbsp

Step by step instruction of cooking Eggplant for dinner

Slice the eggplant as shown in the video, add salt and cover with water for five minutes. Prepare the stuffing: grate the onion and garlic, add salt and pepper, stir.

Drain the water from the eggplants and stuff them with mince.

On a heated pan pour vegetable oil and lightly prigate eggplant on one side for about 4-5 minutes.

In bowl mix water, tomato paste, black and red pepper, and salt. When the eggplant is slightly browned then add tomato filling and simmer, covered for about 25 minutes.
