Today I want to offer you a version of our favorite cakes that are perfect substitute for bread. Delicate and airy cakes, which conquered its taste with my family.

For a start I will show you the lentil flour.
We do it ourselves. My husband grinds at the mill red lentils.
I add the flour in all baked goods. It makes a softer dough and the baking.
And increases the gluten and improves the work of the yeast.
But if you have no such flour, it's not scary and not necessary.

First, I take 1 tablespoon of flour from the total.
And then to the remaining flour add the dry ingredients:
salt, sugar, semolina and lentil flour ( if possible and available).
Semolina is important here. It improves the gluten and makes the dough more elastic, and airy pastries.

All is mixed.

Make the dough:
1 tbsp flour of the total number of+ 1 tsp sugar+ 1 teaspoon with a slide quick dry instant yeast+ 40 ml warm water.
Mix and under plastic wrap to increase three times ( approximately 10 minutes).

The dough I kneaded in the bread machine on the Dough Mode for 1 hour. And the processor if the portion of dual ( nozzle hook), and after the approach into the pre-heated oven for 1 hour ( in the Cup which was done kneading, the top tightly covered with a cotton handkerchief).

So, back to the process.
For dry ingredients I poured the warm water, add the lard and the yeast mixture.

I divided into four equal parts.

Every part of velvety in thin round and place on a baking sheet with parchment, greased with lard.

Then brush them with egg yolk, mixed with water and sprinkle with flax seeds.

Put in the oven ( on the middle of the oven) and increase the temperature to 180 degrees.
I bake mode Top+ Bottom heating for 15 minutes, until Golden color bread.
Take them out of the oven and in 5 minutes leave to cool. You can cover with a cotton towel.
It is now possible to remove them from the pan.
