Knecht Ruprecht is a companion of Saint Nicholas in German folklore. Tradition says that he comes to the houses on St. Nicholas day and asks the children, do they know how to pray. Ingredients for Knecht Ruprecht
- Flour - 375 g
- Sugar - 375 g
- Almonds - 175 g
- Cinnamon - 1 tsp.
- Cardamom - 0.5 tsp.
- Star anise - 0.5 tsp.
- Orange zest - 1 piece
- Lemon peel - 1 piece
- Baking powder (baking powder)
Step by step instruction of cooking Knecht Ruprecht

RUB the eggs with sugar until the formation of stable foam.

Knead the dough. The dough is left to stand overnight ( I have enough patience for 4 hours). Bake at 180 degrees for 20-25 minutes. If desired, cover with chocolate icing. More to my liking had more without the glaze. The aroma during baking, lured the children out of the rooms. Very fragrant cakes!
