With the words: "This is my favorite Indian dish" - this is the recipe shared with me by my close friend Amar (Marina) Marshenkulova, which for many years living and working in India and periodically pleases us coming to their homes. Gave has become my favorite dish, but it is not only delicious, but also useful. I think we all know how lentils are rich in protein and minerals. And yet, I want to note that this is a great meatless dish. If you are going to fast, you can just delete the butter.

Prepare all the products.
The dish was very very useful, I used brown unpolished rice. And so, it is possible and common, you still get very tasty. Brown rice soak in the evening or for 5-6 hours in cold water, thoroughly rinse until clear water. Take the ratio of rice and water to 1 Cup of rice 2.5-3 cups of water. Fill the rice into the boiling water, add salt, bring to a boil and cook on low heat for 40 minutes. While cooking do not stir. Psol turn off the heat and leave the rice to privatise still for 20 minutes. During this time the rice will absorb the remaining water.
Finely chop the onion, tomatoes (1 large or a couple smaller ones), garlic. RUB on a small grater carrots. Definitely need to cook all the spices and vegetables in advance, because the process of further cooking will go very quickly.
Pour into a deep bowl oil and butter. Add mustard seeds and fry for 1 minute. Then add the garlic, paprika, coriander, chilli, turmeric, cinnamon, black pepper (all minced) and fry for 30 seconds. All the time of roasting spices stir incessantly.
Add the onions and fry for 1 minute.
Add carrots and sauté 1 minute.
Add the tomatoes and fry for 1 minute.
Put in a pot of red lentils (can use any, just red cooks faster), add sugar and salt, pour in 3 cups of water, bring to a boil. Reduce the flame, close the lid and simmer for 15 minutes until tender. Periodically, you need to mix, because the mass thickens, begins to settle down and may burn. Add garam masala and finely chopped greens, simmer a few more minutes. Our gave ready.
Spread in deep dish portion of rice, and top with dal. And, as always, Bon appetit!
