Vegetable stew with coconut milk

Today mom ordered something light, no meat (and even without the birds!) for dinner. Here's a wonderful version of the stew caught my eye and I decided to embody it. Like the dish for three generations of my family: my parents, me and my son. It's probably saying something. Dish with an Oriental flavor. I was afraid to put spices and pepper according to the recipe (number), but in vain. Feel free to hang as long as it's written. More - adjust to taste. Maybe my pepper was "weak"? ))) Try it!
Ingredients for Vegetable stew with coconut milk
- Potatoes - 250 PCs
- Carrots - 1 piece
- Onion - 1 piece
- Pepper - 2 PCs
- Chili - 2 PCs
- Garlic - 2 the tooth.
- Green beans - 100 g
- Ginger - 1 tsp.
- Lemon juice - 2 tbsp
- Curry - 2 tbsp
- Coconut milk - 150 ml
- Cashews - 60 g
- Salt - to taste
- Greens - 1 Puig.
- Vegetable oil - to taste
Step by step instruction of cooking Vegetable stew with coconut milk

Carrots cut into strips, onion - small cubes and sauté the vegetables in vegetable oil.

Potatoes, pre-boil until soft (about 10 minutes), cut into cubes. Add to the onions with carrots.

In a pan add bell pepper and thin sliced chilli (free from seeds and partitions), chopped garlic and grated ginger.
Add a little water and saute the vegetables.
