- Yeast - 20 g
- Water - 70 ml
- Flour - 2 tbsp
- Sugar - 1 depot.
- Flour - 150 g
- Rye flour - 150 g
- Wholegrain wheat flour - 150 g
- Coriander - 1 tsp.
- Water - 300 ml
- Honey - 1 tbsp
- Vinegar - 2 tsp.
- Salt - 1 tsp.
- Oil mustard - 2 tbsp
Step by step instruction of cooking Rolls of the three types of flour
For the dough mix all the ingredients and leave to rise. When the dough will begin to fall, it is ready for kneading.
Sift the three flours and mix them with ground coriander.
Boil the water and pour it over the malt. Cool.
In warm solution add malt honey, vinegar, salt, oil. Here also pour in the yeast mixture.
Knead the dough. It should be soft, but if very hard to knead, add a little wheat flour.
Form 6 buns. On the bran. Place on a sheet. Let rise and bake at the temperature of 190 * 10 minutes with steam and 20 minutes without.
Completely cool under a towel.
