Chorba — the name of the Moldavian, Romanian, Serbian, Macedonian and Bulgarian national hot thick soups. The name comes from the Turkish word shurpa (Tur. чorba), different spoken in the middle East and which gave its name to different structure and technology of soups as Turkic peoples and other peoples living on the territory of the Ottoman Empire: shurpa, surbo, sorba, sorba, surpe, DARPA, shurva. It is prepared based on meat broth with vegetables and spices.

Step by step instruction of cooking Chicken soup (chorba peleska)

I was preparing corbo of chicken, but you can take and other meat (pork, beef, lamb). Chicken wash, cut, I took to the backbone of the soup (soup mix) and one thigh. The skin was removed. Fill with water to cover the meat, allow to boil and drain off the first water. Then fill with cold water, put the onion and cook until the meat is cooked. Water a little sunflower.

When the chicken is cooked, take it out of the pan. The bulb is also removed, we don't need her. Put in a pan of potatoes, cut into cubes, leave to cook. The meat separated from the bones.

Meanwhile in a pan pour a little sunflower oil and melt 15 g of butter. Spread chopped onion and 3 cloves of garlic. Fry until transparent.

When the onions become transparent, add grated carrot, if you like celery you can add it. A little fry.

Add the spices: sweet paprika, coriander, marjoram, parsley, dried. Corbu in the Balkans, like our soup, each hostess prepares in their own way, so if you don't like some ingredient, or Vice versa, I want to add, feel free to experiment! Add flour, mix up.

Pour in the tomato juice, mix up low down the fire and cook for about 10 minutes. You can add instead of juice, tomato paste and dilute with water or broth from the pan.

Meanwhile, meat without bones returned back into the pan. Add the prepared fried, mix up.

In a small bowl dissolve 2 tbsp sour cream or yogurt with 1 egg. You can still cook Corbu without tomato, just make fries, and the sour cream with the egg add the flour, dilute and pour into the soup.

Pour sour cream-egg mash into the soup, stir up well.

Add Bay leaf, salt to taste, pepper, sweet bell pepper. Leave to simmer for 3 minutes.

In the end add chopped greens, cover, turn off the stove and allow to infuse for 10 minutes.

Served to the table hot, can, if desired, sprinkle with lemon juice. Soup is nourishing and delicious, it's different from our usual soups. Highly recommend to cook. Bon appetit!
