The recipe for this dish dates back to the 16th century and is mentioned in the book of the Banquet of the Palace in Edirne. The dish is rich and colorful. The mixing of different flavors and textures makes it unique. If you like combinations of sweet and salty, spicy and meat, honey mahmudiye just have to taste. Traditionally, honey chicken served with pilaf. It can be just rice or with the addition of vermicelli. Don't have to use Orzo pasta, you can do the usual noodles that we use for soup.

To prepare the pilaf instead of Orzo pasta I use regular vermicelli, known under the name of "gossamer".

Pour water, add salt. Cover the saucepan with a lid and over low heat bring the risotto until tender for 20 minutes.
Remove from heat (do not stir), remove the lid, cover with a kitchen towel. Install the back cover and leave for 10-15 minutes. This way the towel will absorb excess moisture, and cereal will remain crisp and not watery.
